Fondue 1 1/4 cups white dry wine Reisling is good, wine store will know tell them for fondue. one pound cheese I use 1/3 gyrere and 2/3 rd emmenthaler grate and mix with a handfull or two of flour Rub wooden spoon and inside of fondue pot with garlic and discard clove. Heat wine until boiling- not just bubbles start the cheese off slow stir in figure 8 CONSTANTLY Kate I usually use 1 1/2 c wine and 1 and 1/2 pound cheese 1/2 pound gyrere and 1 pound swiss(emmenthaler) I always used cave aged gyrer or imported from Switzerland Have Fun Do not Eat Too Much Use French bread
